The new 2020 vintage of Cupido was made in the Petillant-Naturel style again, as well as with Carbonic Maceration. During the initial stage of fermentation, these grapes ferment in the tank as whole berries and it gives off a bubblegum or candy aroma in the finished bottle. There is a lot of fruitiness in this sparkling rose as well. Guava, melon, and citrus notes are just a few that can be named. The style of carbonation we use is one of the oldest methods of bottling wines, and we bottle right before all the sugar in the wine is depleted. This gives it a nice amount of carbonation when the yeast finishes fermentation. This Cupido has a medium amount of carbonation and it really makes for a lively, light, and refreshing wine. There’s sediment at the bottom of the bottle; don’t be concerned - it’s a completely natural result of the fermentation process for this style of wine. Enjoy on a hot summer day while its super cold!
