The latest vintage of Carbonica is a 50/50 blend of co-fermented Grenache and Mourvedre made in the style of carbonic maceration. This wine was fermented whole cluster for 10 days, destemmed and crushed to a fermentation bin and then pressed at dryness. Afterwards, it was aged in French oak barrels for 9 months prior to bottling. Like any carbonic wine, it has a lighter body than a conventionally fermented wine, with a focus more on fruitiness and freshness, per the French “nouveaux” tradition. Carbonica exhibits notes of guava, raspberry, and mint. It’s only 12% alcohol but the finish lingers nicely and has enough structure on the palate to compliment cured meats and cheese.
