Our style of winemaking at Ramos Torres is as natural and as clean as possible, meaning that we make as few additions to the wine as possible; this includes conventional fermentation yeast. Our newest Viognier in bottle was made 100% naturally, no yeast or yeast nutrient additions. This process gives this wine a really interesting fruity nose, while the neutral barrel fermentation gives this rather low alcohol wine some depth on the palate. It features a good deal of peach and pear aromas, as well as a hint of anise. There is still some nice acidity that brightens the flavors, while at the same time is counterbalanced by a nice viscosity you normally don’t find in wines with comparable alcohol levels. This is best enjoyed chilled on a hot day, and it pairs really nicely with soft cheeses.
